I’m always a little wary when someone tinkers with Cuban food classics. It’s probably because most folks who try to don’t understand it in the first place. Over the years I’ve heard Cuban Food characterized as anything from bland to just plain boring. I take offense to comments like that having been raised in a Cuban family where my grandmother put together some of the best dishes I’ve ever eaten. There were flavor and love there.
This brings me to Alberto Cabrera’s Bread + Butter which just opened last week. I had a conversation with him last year at his former establishment about Cuban Culture and of course about Fritas. Make no bones about it, he is Cubanaso to the core and I mean that in a complimentary way. He embraces our heritage very well through his food. He wants the dishes to be something new yet still have their ties to the food we grew up eating. I know my late grandmother would have loved & appreciated the food at Bread + Butter.
So because of that, I will not even try to describe what I ate. I’m incapable of giving it the grandiose write up it deserves. You’ll just have to come in and try it for yourself. I do suggest you order the Plantano en Tentacion and the Tamal en Casuela.
I posted a copy of the Dinner Menu (from last night) which changes daily. Lunch (which starts today Thursday, Feb 7th) will feature Completas (pre-set meals) and a whole other Menu which is also below.
