I rarely ever speak of it on the blog but I love folks who put together a great concept with decor & ambiance that matches it. It’s not as easy to do as some people seem to believe. The minute I stepped into Swine Southern Table & Bar I felt as if I was about to bear witness to a “religious experience”. I was right.
After ordering a Victory Prima Pils to get things started, we (that would be my wife Marcela and I) settled on the Deviled Eggs, the Brisket Sliders and the Chili to start with. The Deviled Eggs came out first. Is there a proper technique for eating these guys? I considered the fork & knife routine but decided it was best to go the one bite route. It was a great move to have the Bacon and pickled Mustard Seed topping them too. Just as we were finishing those up, the Brisket Sliders and Chili show up. The pulled Brisket in the Sliders were topped with pickled Red Onions. They were great 4 bite affairs. I liked the Chili but I prefer mine without any beans, it was Marcela’s favorite though. It had a little bit of heat which was also nice.
There was some “Fixins” to be had too: Homemade Cornbread, Mac & Cheese and JOJO’s to be exact. Served with a side of Maple Butter & Blackberry Jam that Cornbread with Jalapeño, Cheddar & Bacon was hide from your spouse great. In this case, she was here and there was enough to share. In fact, I’m having one for breakfast as I write this. The 5 Cheese Mac & Cheese is just as good as the picture looks. Well, not as good because you can’t eat a picture…..yet!
The server (who was excellent by the way) informed me that my sandwich already comes with Fries when I was trying to decide whether I should have some JOJO’s. There was no way I was leaving without trying these Chicken-fried Fries so it was full speed ahead on these. I mean, how can you say no to Chicken-fried anything? If the idea wasn’t awesome enough already they come with a side of Spicy Ketchup. If you can only have one go with the JOJO’s. I had both cause I can’t help myself.
So it’s not really a sandwich that I had as my main but a Burger. I ate a version of the Swine Burger at the NHM Closing Party a few weeks back but at this point I had been waiting too long to have the full monty. And then here it was before me. The Swine Burger is a Double Cheese with a thick slab of Bacon & Swine Special Sauce Burger. I removed all the veggies as usual cause they just get in the way.
I’m speechless. I’ll leave it at that.
If I were you I would go to Swine, order 2 Swine Burgers and invite me over. I’ll be there in 2 shakes of a lamb’s tail or in this case, pig’s tail.
