If you’re a Fried Chicken fanatic and really, who isn’t these days then you’ve got to check out Lee Brian Schrager’s new book/cookbook Fried & True. There’s a bunch of great stories, techniques for making for making Fried Chicken and over 50 recipes, including some from local restaurants like Michy’s, Hy Vong and Versailles.
My favorite part is where Lee talks about how he tried to get the recipe from the folks at Popeye’s. Luckily, it ends happily with Wylie Dufresne’s Popeyes-Style Chicken Tenders and Biscuits recipes. I am far and away most excited about that, and I will definitely be making those tenders and biscuits this weekend.
