I’ve had a Breakfast Truck on my Food Truck wishlist for the last couple of years but Santa hasn’t wanted to cooperate with me on that one. I was Egg-cited (I promise not to continue being pun-y but I had to get this one out of my system) to find out about Eggstatic a few weeks back before they opened for business. They’ve been parking by an apartment complex in Ft. Lauderdale for breakfast from 7:30AM – 10:30AM which equated to a 45-minute drive for me very early in the morning. I chose the morning after July 4th (that would be July 5th) to check them out thinking traffic should nice and clear as people would still be recovering from the night before. I was right and it was a nice smooth ride up to the 954 at 7AM in the morn.
1) “Your Sunny Side Up, I’m Fried”
Open Face Turkey Bacon, Fried Egg w/Tomato, Spinach topped w/Shaved Parmesan on a Homemade Cheddar Buttermilk Biscuit.
2) “That’s all yolks”
Falafel and Fried Egg on a Torpita w/Hummus, Feta, Tomatoes, Green Peppers and Sunflower Seeds.
3) “Huevo-over your head”
Spicy Chili on a deep fried Tortilla topped with a Fried Egg, Spinach, and Shaved Cheddar Cheese topped with Crema.
4) “Great Eggspectations”
Organic Cinnamon Raisin French Toast w/Maple Agave Caramelized Apples topped with Powdered Sugar
5) “Chegg it out”
Buffalo Chicken & Bleu Cheese Dressing with a Scrambled Egg Patty w/Chopped Celery on a Homemade Cheddar Buttermilk Biscuit.
Rustic Potato Hash
My wife Marcela settles on the “That’s all yolks” and I go against my gut instinct (more on that shortly) and order the “Chegg it out”. The colors make it pop right out of the container. Marcela enjoys it and those ingredients are right up her alley. I’m not a hummus kinda guy so I skipped it.
My “Chegg it out” was just what I needed. I’ve always been hesitant to eat Chicken & Egg in the same meal. I’ve thought that even though the possibility is small, it’s there that the Chicken & Egg could be a related Hen and Chick. I don’t even want to get into Egg Washes in the breading of Wings, it’s just too traumatic. I was assured it would be ok to have the “Chegg it out” since mother & child would have left this earth together into the sacred vehicle of my stomach. It was a great sandwich with some added crunch from the carrots & celery. The grilled Buffalo Chicken breast was under the beautifully cooked Egg. And that homemade Cheddar Buttermilk Biscuit well….someone should write a song about it to sing around the campfire. My only issue is that it was impossible to eat as an actual sandwich.
The Rustic Potato Hash was made of Sweet Potatoes and was a worthy partner to my open-faced sammy.
We took an order of their “Great Eggspections” to go for my mother in law. I did sneak a bite (I had to) to make sure that everything estaba en punto as they say. And it was. Next time “Huevo-over your head” is gonna get the business if you know what I mean.
