A few weeks ago, I started following King of Racks BBQ’s updates on social media. Once they settled into a semi-regular schedule, I decided to try them.
When King of Racks BBQ launched in 2013, the food truck was typically found on Thursdays through Sundays at 107th and Kendall Drive. The starting times varied from as early as 4 PM and sometimes went as late as 4 or 5 AM.
King of Racks BBQ Food
I sampled the entire menu, from the Redneck Mexican Tacos to the Ribs Platter. Initially, there was a Queen or King of Ribs option, depending on your hunger.
The Redneck Mexican Tacos come with two soft tortillas filled with brisket, mozzarella, slaw, jalapeños and grilled onions.
The brisket sandwich is on a Brioche bun with housemade BBQ sauce, feta cheese, onions, and an egg. I added an egg, which next leveled this messy, tasty sandwich.
Swamp Dog is an all-beef hot dog cooked in beer, split in half, and deep-fried. This filling wiener comes with pulled pork, grilled onions, cream of corn, Feta and mozzarella cheeses, slaw, and guava BBQ sauce.
Is the Swamp Dog excessive? Yes, so only eat if you’re really hungry.
The ribs platter, drizzled in their housemade BBQ sauce, featured tender, smoky meat that fell off the bone. And you must order the cream of corn!
Get the Porky Sandwich
The only disappointments on my first visit were the chicken strips and the Squibbs BBQ Sandwich, which used those same strips. It would have been a home-run meal if they had used smoked BBQ chicken. Both items would eventually removed from the King of Racks BBQ menu.
While I’m not big on pulled pork, the Porky Sandwich with shredded cheese, house BBQ sauce, and a fried egg fits right in that comfort food zone if you’re looking to take a nap afterward.
King of Racks BBQ does not serve any particular style of BBQ, but Anthony Garcia (the owner) does a great job of reading the crowd and serving delicious, stick-to-your-guts grub.
