Billy’s Boudin & Cracklins in Scott, Louisiana, was one of the stops we made on our 8-hour drive from Houston, Texas, to Pensacola, Florida, on our way to Jerry’s Drive In. On these longish drives, it’s essential to limit the amount of stops so as not to double the drive time.
However, it’s important to know when skipping out on a stop will be something you regret later. We were on the fence about stopping here, but cooler heads prevailed.

I wasn’t well versed in the wonderful of boudin, but what little I did know was enough for a quick, in-and-out stop there. Marcela got off while I waited in the car, catching up on emails and texts.
My only comment to her was to get boudin balls, cracklins, and fried corn.

What are Boudin Balls?
Boudin balls are a famous Louisiana Creole and Cajun dish made from boudin, a sausage originating in Louisiana. Boudin typically consists of cooked pork, rice, onions, and various seasonings, all encased in a sausage casing. It’s a dish with a unique texture and taste.
To make boudin balls, the boudin mixture is taken out of the casing, rolled into small balls, and then breaded and deep-fried until crispy. Boudin balls are often served as an appetizer or snack.


Marcela surprises me with not only a regular boudin ball but another with a pepper jack cheese layer in the middle. I enjoyed it, but nothing beats the flavor explosion of the original.

Time to Eat Cracklins and Fried Corn
The boudin balls were delicious, and these cracklins (chicharrones), breaded and tossed in a dry rub, were another big-time winner.


But it was the fried corn 🌽 on the cob that left the biggest impression on us; freakin’ great! It’s the same breading as the boudin balls and cracklins, and it confirms the thoughts that all of us have about fried food.

If you bread and fry a dish that is already good, is it better? The answer is a resounding YES!
