Subby’s Subs (7370 SW 57th Ave) just opened up in South Miami, down the street from Sunset Place and across the street from Power Pizzeria.
EJ, the owner of Subby’s Subs and Power Pizzeria, is committed to making top-notch hot and cold subs. Generally, I go to sub shops for cheesesteaks, so I won’t be ordering a cold one anytime soon.
I know that when it comes to the beautiful world of chopped chicken subs, the honey mustard has a giant cult following. I’m not a part of that crew; I like mine with grilled onions, mustard, salt, and pepper, and that’s it. It’s simple perfection.

There’s a rack with a bunch of chips; however, I’d rather eat two subs than fill myself up with those fellas. What was my second sub? A cheesesteak, of course!
To be clear, this is not a Philly cheesesteak. It’s chopped steak with grilled onions and American cheese. Plus, I like a little mayo on the roll to tie it all together.
The bread that Subby’s is using is excellent and does not fall apart under the weight. EJ mentioned that they tested many buns before settling on these.
That first bite transported me to Miami’s sub shop glory days of the late 1980s. Those were the days if you were into mom-and-pop shops making awesome hot subs.
All the subs are cooked to order, so nothing is sitting around. Unfortunately, there is no cheeseburger sub yet, but I have my fingers crossed.
